Migas Scrambled Eggs with Tortilla Chips and Chorizo
May conjures up memories; in particular end of school memories. Let's face it. May always ended up in a blur. And then it was over. School was out and we all took a deep breath and breathed a big sigh of relief. It always seemed teachers would cram every possible thing that didn't get finished, into the last few weeks of school. I love teachers, but as a parent May was the month I cursed them

Bacon and Egg Breakfast Salad with Balsamic Maple Vinaigrette and Manservant's Diet
I'm sure I've mentioned that it seems we are always on diets. I know it doesn't look like it, but it's true. Lately Manservant has been really into the 4 Hour Body. if you aren't familiar with it, it is actually quite interesting. Not that I don't think Tim Ferris is a bit over the top, but some of his theories are based in science. Now I was never very good at science and I'm not very

Everything But the Bagel Scrambled Eggs and a Real Breakfast
Breakfast is one of my favorite meals, when it is a REAL breakfast. Often times it is just oatmeal or yogurt, which is fine, but to me, it just isn't a REAL breakfast. A REAL breakfast has eggs, and toast and hopefully potatoes and bacon or sausage or biscuits or waffles or pancakes or even French toast. And fresh OJ. Well, fresh OJ doesn't happen often and often enough REAL breakfasts

Overnight Mexican Egg Casserole
Weekends call for relaxation in my book. Of course, this applies when there is no gardening or laundry, so for me this weekend doesn't qualify. But last weekend sure did! You already know that Alex and Zoe were home and because of that I made sure to not have anything to do! I like to spend all of my time with them. I'm not sure it always works that way on their end, but they give it a

Shakshuka Eggs in Purgatory
My love affair with Shakshuka began on Thanksgiving. Amidst the chaos of cooking for the big day, my son decided to cook eggs for everyone. Not that there were too many of us around, but I am always a bit stressed until the big meal is ready. And as many of you might know, Thanksgiving does involve a bit of cooking. Breakfast with Alex usually means starting about 11 AM. It means removing

My Favorite Red Chile and a Breakfast Sandwich
Red chile and a breakfast sandwich.
It was a cold, gray morning here in Colorado. After the snow and freezing temperatures my poor hyacinths just didn't want to wake up. Their dark green leaves and their pink and purple flowers lay drooped in the dirt. But their scent is still strong and I am hopeful they will make a recovery. It is the only flower the rabbits ignore. But they better watch

Simply Baked Green Chili Scrambled Egg Souffle
Simple Baked Green Chili Scrambled Egg Souffle
This year has moved so slow but yet I look back and can't believe it is April. Many of you know we've been in a transition period. My husband is finally living in the States again and hopefully soon having work to rely upon. Working overseas is great but when you come home, reestablishing yourself can be tough, especially when you come home

Breakfast Burritos
Egg and Potato Breakfast Burrito
Thanksgiving is over which means the turkey is close to being gone. We’ve had turkey sandwiches with cranberry sauce, turkey enchiladas, turkey and tamale stuffing with red chile sauce and fried eggs and I think we still have turkey soup and turkey salad to go. Not bad for the poor maligned turkey who I am very thankful for. I never understand people who

Egg Salad and Gladiolus
Egg Salad
I just returned from Philadelphia where I helped my daughter move into her first apartment. I am happy for her but it is bittersweet for me and I am not going to dwell on that today. What we are dwelling on is how hot it was. (I always know it is hot and humid when my upper lip starts to sweat.) We moved up 2 flights of stairs in an unairconditioned building (though her unit was) in

Okonomiyaki (It's what you want!)
Okonomiyaki (It’s what you want.)
It was 85 degrees in Denver on Sunday. You might say it was just a bit warm for Denver on April 1st. Nature’s way of joking with us. Of course today it is snowing which is really typical for spring in the Rockies. I say, Mother Nature, bring it on! We need the moisture. In any case; Sunday found me going to the grocery and buying
