Corn and Grits Pudding with Green Chilies and Cheese
So Monday is upon me and I am so unprepared! Somehow I can be totally ready for everything I want to accomplish for the weekend, but then Monday hits and it takes me all of Monday to get ready for the rest of the week! Is anyone else like that? Maybe it is because Manservant is always flying somewhere and when he's home on the weekend I need him to help me accomplish all the tasks I can't

Calabacitas Tomato Sandwich
The end of summer is a perfect time to highlight Colorado's glorious produce. And glorious it is. Palisade peaches from High Country Orchards and Kokopelli Farms should not be missed. They were perfect this year. Sweet and juicy, they were some of the best I remember in a long time. Colorado kale from Full Circle Farms and heirloom tomatoes from Dooley Farms were often on my dinner table,

Corn and Green Chile Chowder or Thank Goodness for Corn
Some days do not have gold or platinum linings. Some days do not have even silver. Some days just have corn. And thank goodness for corn. (I also could have used the word potatoes. As in thank goodness for potatoes. But I digress, because today is about corn.) Maybe tomorrow there will be potatoes. Of course, I could have added potatoes to this chowder, because then it would be chowder, which

New Style BBQ or 3 Twists on Old Favorites
After looking at this photo I realized it doesn't look too out of the ordinary. Kind of your typical old fashioned bbq on a plate. Corn, slaw and chicken. I'm down! Truth is though, it isn't quite like that. Sometimes I think outside the box and need something a bit less traditional. I never know what I'm going to come up, but in this case it turned out pretty good.
And why I am calling

And So It Is and Grilled Lemon Shrimp Pasta
What do they say about good intentions? Ah well, I don't think I have to worry about hell, but I do have a lot of recipes piling up. It appears that my ability to juggle kids and the comings and goings of said beings, has interfered with getting these recipes to you! In my younger days when said kids were younger too, my organizational capabilities were at their height. Since they have

Macho Salad..I Mean, Really?
I've never thought of salad as feminine or masculine. Salad isn't quiche-remember how real men don't eat quiche? Or did they eat quiche? That was a long time ago. I can understand that a salad such as a pretty Bibb lettuce salad tossed with tiny mandarin oranges, sprinkled with lightly toasted almonds might be considered a bit more feminine then say, a taco salad loaded with meat. Does that

Crispy Chipotle Shrimp and Corn
Summer's end is quickly approaching and I still have so much more to do. Yes, we are still fighting rabbits but their numbers have decreased considerably thanks to rabbit catcher. Our yard is looking fairly good thanks to his hard work and my suggestions?. Though we didn't have a garden this year, hopefully next year will bring better things into our life and our mouths!
Yesterday I

Summer Corn Pasta with Burrata
Summer Corn Pasta with Burrata
There are many days I find myself getting caught up in being busy. Sometimes, busy for busy's sake, and that's not good for any of us. But last week, I did clean the garage by taking everything out and sweeping and then power washing the floor. Impressed, huh? Well, then you must be easily impressed. I also cleaned the basement which I hate more than

Green Posole in a Green Kitchen
Green Posole
I don’t know what has overcome
me. My, oh my. It must be in the beans. In the quest of trying to be healthier
my husband has requested a diet of more beans and less white stuff. I know you
know what I’m talking about. Because, it’s like, my favorite category of foods.
Like sugar. And pasta. And rice. Let’s not forget about bread. Oh, it pains me
just thinking about it.
But

Corn and Green Chile Quesadillas
Corn and Green Chile Quesadilla
I discovered quesadillas during my first year of college in Arizona. In Illinois Mexican food was virtually unheard of unless you bought those crisp taco shells that came in the package. Never liking those made me think I didn’t like Mexican food. Plus I had a father who claims and still does, that all Mexican food looks alike so it doesn’t matter what you

Avocado Corn Soup and a Starry Night
Chilled Avocado Corn Soup
I’m feeling lazy today. It is gray outside and though it is not raining, it feels like a rainy day. 90 degrees has disappeared and now it feels like 70. Usually this tempts me into baking cookies but my refrigerator is broken and I’m too disoriented to bake. The refrigerator repairman comes tonight and I am praying it is repairable as I really would hate to buy a

Corn and Beer
Elote Corn, Bacon and Potato Hash
My son came home for a few days. He hasn’t been gone that long but I will always welcome him home. It was nice to hear another voice in the house. Even the dogs were happy to see him. He had a few things to do while he was home and one of them involved bottling beer. He started it in June and it was ready. At least ready to be removed from the floor of my

Elote Corn in a Bowl
Elote Corn
If there is one thing you need to know about me it is that I love corn. Summer to me is synonomous with corn. Yellow may represent the sunflowers and the sun to many of you but to me it means corn. Maybe it is because I grew up in Illinois in a town that was surrounded by corn. I still miss seeing the never ending cornfields that ended my summer by waving tassels at me as I
